The story that went with it was just as delightful. It was great fun and inspirational to watch The Green Panda&#8217;s group in Kenya put together this beautiful soup outdoors. I&#8217;m looking forward to trying that myself during the warmer months here! It really works!)<\/li>\n<li>Carrots, 1 lb., washed and cut into medium dice<\/li>\n<li>Onions, 1 lb., cut into medium dice<\/li>\n<li>Tomatoes, 1 lb., cut into medium dice<\/li>\n<li>Swiss Chard, 1 large bunch, remove leaves from stems, finely chopped<\/li>\n<li>Garlic, 1 head, peeled and chopped<\/li>\n<li>Extra virgin olive oil, 1\/4 cup<\/li>\n<li>Smoked paprika, 1 TB<\/li>\n<li>Cinnamon,\u00a01 TB<\/li>\n<li>Cilantro, 1 bunch, washed and coarsely chopped<\/li>\n<li>Lemon, 1\/2 &#8211; 1, juiced<\/li>\n<li>Cumin, 1 tsp. (Most recently I used 1 TB and no coriander)<\/li>\n<li>Coriander, 1 tsp.<\/li>\n<li>Salt, to taste (I usually use about 1 TB per gallon of soup)<\/li>\n<li>Hot paprika, 1-2 tsp. (Opt.)<\/li>\n<li>Water to cover (between the chickpea liquid and water, about 5 quarts)<\/li>\n<\/ul>\n<p style=\"text-align: center;\"><a href=\"https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2017\/10\/MoroccanChickpeaPumpkin02_web.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-3237 alignleft\" src=\"https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2017\/10\/MoroccanChickpeaPumpkin02_web.jpg?resize=474%2C315&#038;ssl=1\" alt=\"\" width=\"474\" height=\"315\" srcset=\"https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2017\/10\/MoroccanChickpeaPumpkin02_web.jpg?resize=1024%2C680&amp;ssl=1 1024w, https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2017\/10\/MoroccanChickpeaPumpkin02_web.jpg?resize=300%2C199&amp;ssl=1 300w, https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2017\/10\/MoroccanChickpeaPumpkin02_web.jpg?resize=768%2C510&amp;ssl=1 768w, https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2017\/10\/MoroccanChickpeaPumpkin02_web.jpg?w=1200&amp;ssl=1 1200w\" sizes=\"auto, (max-width: 474px) 100vw, 474px\" \/><\/a><\/p>\n<p><strong>Instructions<\/strong><\/p>\n<ol>\n<li>Prepare the chickpeas by rinsing, covering with plenty of water, and cooking covered on low heat until tender (1-2 hours). Check periodically to make certain there is still sufficient water. Set aside with the remaining water.<\/li>\n<li>Prepare the veggies (squash, carrots, onion, tomatoes chard, cilantro) and set aside. Note: you can replace the fresh tomatoes with a 19\u00a0oz. can of petite diced tomatoes if you&#8217;re in a hurry)<\/li>\n<li>Mince the garlic.<\/li>\n<li>Add 1\/4 cup extra virgin olive oil to a large soup pot. Saute the garlic and onion until softened.<\/li>\n<li>Add the squash, carrots\u00a0and tomato (or 19-oz. can petite diced tomatoes) and the reserved chickpeas with their water.<\/li>\n<li>Add\u00a0additional water until all is cover &#8212; less for a more &#8220;packed&#8221;\u00a0soup, more for a brothier\u00a0soup.<\/li>\n<li>Bring the soup to a boil, reduce heat to simmer, cover and cook until the veggies are tender.<\/li>\n<li>Add the seasonings and lemon juice and check the taste. For the last eight years I have owned a five-star (YELP) vegetarian cafe. This year we were voted best vegetarian dining experience in McHenry County by the readers of the Northwest Herald. I write articles on food for a local newspaper.
