This is another popular Middle Eastern salad to serve as part of a mezze (Middle Eastern appetizer table), alongside of hummus, or all by itself. It is a street food in the Middle East and is part of breakfast in Egypt. There are many versions of this dish. This is mine:<\/p>\n<figure id=\"attachment_1310\" aria-describedby=\"caption-attachment-1310\" style=\"width: 474px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2015\/08\/image4-e1438545683944.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"size-large wp-image-1310\" src=\"https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2015\/08\/image4-1024x681.jpg?resize=474%2C315\" alt=\"FUL in the making\" width=\"474\" height=\"315\" \/><\/a><figcaption id=\"caption-attachment-1310\" class=\"wp-caption-text\">FUL in the making<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p><b>FUL<br \/>\nIngredients<\/b><\/p>\n<ul>\n<li>Fava beans, 1 lb. dried (small) beans<\/li>\n<li>Chickpeas, 1\/2 lb. dried<\/li>\n<li>Plum Tomatoes, 6 petite diced<\/li>\n<li>Garlic, 1 TB minced<\/li>\n<li>Extra virgin olive oil, 1\/2 cup<\/li>\n<li>Lemons, juice of 2 (1\/4-1\/2 cup &#8211; I use closer to 1\/2 cup)<\/li>\n<li>Cilantro, 1\/2 bunch, chopped<\/li>\n<li>Salt, 1 TB (scant)<\/li>\n<li>Cumin, 1-1\/2 TB<\/li>\n<li>Red pepper, crushed, 4 tsp. (scant)<\/li>\n<\/ul>\n<p><a href=\"https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2015\/08\/image6-e1438546377783.jpg\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\" size-large wp-image-1312 aligncenter\" src=\"https:\/\/i0.wp.com\/vegetatingwithleslie.org\/wp-content\/uploads\/2015\/08\/image6-1024x681.jpg?resize=474%2C315\" alt=\"image\" width=\"474\" height=\"315\" \/><\/a><\/p>\n<p><b>Instructions<\/b><\/p>\n<ol>\n<li>Rinse small fava beans and chickpeas, place together in a pot to cook, and add water 1-2&#8243; over the top of the beans.<\/li>\n<li>Bring to a boil, reduce heat and simmer until done, 1-2 hours.<\/li>\n<li>While the fava beans and chickpeas are cooking, prepare the sauce.<\/li>\n<li>Petite dice the tomatoes. Cut the green beans as shown in the picture. Mince the garlic. Squeeze the lemons. Chop the cilantro.<\/li>\n<li>Add the extra virgin olive oil to a pan with the minced garlic and allow garlic to simmer for a moment.<\/li>\n<li>Add petite diced tomatoes and remaining seasonings except cilantro.<\/li>\n<li>Stir and simmer tomatoes and seasonings for a few moments until mixture is saucy. Turn off the heat.<\/li>\n<li>When sauce mixture is cooled, add cilantro.<\/li>\n<li>When beans are cooked and well-drained, place in a bowl or back in pot, and add sauce.<\/li>\n<\/ol>\n<p>Ful can be served warm or cold.
